In this course we examine the troubled state of health in America, identify how scientific theories take shape, as well as consider reductionist and “wholistic” perspectives in nutrition. You will be introduced to basic nutrition concepts and discover how food policy and politics affect our diet and health choices. You will also gain an understanding of how the changes in food production have impacted our environment. We provide an overview of the benefits of a healthy lifestyle and explore nutrition as a “symphony” of interactions rather than the result of individual nutrients or mechanisms.
